Wholemeal toast with Ajvar and Halloumi: Nice sandwich!

Our toasted wholemeal bread with ajvar and halloumi comes with arugula and pumpkin seeds.

Our toasted wholemeal bread with ajvar and halloumi not only looks really nice, it also tastes sooo good. Perfect as a snack, quick dinner or accessory for the grill. Curious? We thought so! Just read on and learn how to prepare this delicacy in the home kitchen.

Ingredients for 4 servings:

  • For ajvar:
  • 500 g pepper, red
  • 1 chili pepper
  • 1 onion
  • 3 cloves of garlic
  • 4 tablespoons olive oil
  • Salt and pepper from the grinder
  • 1/2 teaspoon smoked paprika powder
  • 2 tablespoons white wine vinegar
  • Besides the:
  • 200 g halloumi
  • 2 tablespoons olive oil
  • 1 handful of arugula
  • 4 slices of bread, whole grains
  • 2 tablespoons pumpkin seeds, chopped

Approximately per serving:

  • 573 calories
  • 41 grams of fat
  • 27 grams of carbohydrates
  • 22 grams of protein

Preparation time:

  • 20 minutes (plus 30 minutes cooking time)

And this is how it is done:


  1. In the first step, wash the peppers, quarter them, core them and place them skin side up on a plate. Let blacken in the oven under the grill. Remove, cover with a damp kitchen towel and allow to cool.
  2. Remove the skin and dice the meat. Wash, polish and chop the chili very finely. Peel the onion and garlic and cut into fine cubes. Heat the oil in a saucepan and fry the onion and garlic for three to four minutes.
  3. Add the chili and pepper pieces and simmer for about 15 minutes on low heat. Mash finely about 1/3 and mix into the rest of the pepper mixture. Bring to the boil again, season with salt, pepper, paprika and vinegar.
  4. Pour into a glass or bowl and allow to cool. Cut the halloumi into four slices and fry in olive oil in a coated pan for two to three minutes on each side. Sort the rocket, wash and shake dry.
  5. Toast the bread slices briefly on both sides in a dry pan, spread with ajvar, top with arugula and fried halloumi and serve sprinkled with pumpkin seeds.
