But what helps so that you do not feel too heavy after dinner? To refrain from carbohydrates! This tarte flambée is a delicious, hearty, but still light dish – onion, cheese, ham, all in… but the base is made of cauliflower!

And that makes it easy to enjoy. For it replaces the dough, which is otherwise the ultimate source of carbohydrates, with a low-carbohydrate variant.

The only problem: it takes a little work to get the cauliflower small. It works with the knife and grater – everyone who has a food processor that does the job is fine. Otherwise, the delicious recipe is really simple and really good. Here comes the guide.

Ingredients for tarte flambée without carbohydrates: this is what you need

You will need: 250 grams of cauliflower, 2 eggs, 200 grams of grated cheese, 2 onions, a packet of diced, lean ham (but you can also omit this) and 200 grams of crème fraîche, pepper and salt – and a little parsley for decoration if needed

Here’s how: Preheat the oven to 180 degrees. Clean and wash the cauliflower, divide into bouquets and chop until the pieces are as large as the rice grains. If you have a food processor to tear down, you can use this. Alternatively, the cauliflower can be grated or chopped with a knife – it’s more work, but it works the same way. If a cauliflower is too large: The chopped cabbage can also be frozen and the cauliflower rice, boiled in hot water, is also suitable for many other low-carbohydrate dishes.

The cauliflower pieces are mixed with the eggs and half of the cheese. Season this mixture with salt and pepper as well. The resulting dough comes in a mold lined with baking paper (either a higher plate, a springform pan is sufficient) and pre-bake in the oven for about 25 minutes.

Tip: The baking paper is difficult to fit in high plates. But there is a simple trick for this, which is also helpful for bread molds when baking cakes: Soak a baking sheet paper under running water and then twist it out well. The slightly damp paper can be pressed into any shape.

Tarte flambée without carbohydrates: The topping can be varied

While the bottom is baking, cut the onion into rings and mix the creme fraiche with salt, pepper and the remaining cheese. When the base is ready, spread it with crème fraîche and the cheese mixture and top with diced onions and ham. Then the tarte flambé goes into the oven for 15 minutes. Have a nice meal!
