Ingredients for 4 servings:

  • To the biscuit
  • 3 eggs
  • 75 grams of sugar
  • 50 grams of flour
  • 2 tablespoons starch
  • 2 tablespoons melted butter
  • For the filling
  • 4 sheets of gelatin
  • 2 egg yolks
  • 80 grams of sugar
  • 1 teaspoon vanilla extract
  • 4 tablespoons almond liqueur
  • 200 g mascarpone
  • 200 grams of cream
  • 60 ml of coffee; prisoners
  • 80 g grated chocolate; bittersweet
  • 2 tablespoons cocoa powder

Approximately per serving:

  • 595 calories
  • 38 grams of fat
  • 50 grams of carbohydrates
  • 10 grams of protein

Preparation time:

  • 50 minutes (plus 10 minutes baking time and 3 hours cooling time)

And this is how it is done:


  1. Preheat the oven to 200 degrees top and bottom heat. Cover a baking sheet with parchment paper. Beat the eggs with the sugar white and creamy. Sift the flour with the starch over and turn over the melted butter.
  2. Spread the mixture on the plate and bake in the oven for about ten minutes until it is slightly golden brown. Take out, turn over on a sugared kitchen towel, pull off the paper and let the biscuits cool. Soak the gelatin in cold water.
  3. Whisk the egg yolks with sugar, vanilla and 2 tablespoons almond liqueur over a warm water bath until creamy. Dissolve the squeezed gelatin in it. Stir a little until cold and then mix in the mascarpone. Whip the cream and turn down.
  4. Halve the biscuit crosswise. Mix the coffee with the remaining liqueur and brush on top. Spread each with cream and sprinkle with 60 g grated chocolate. Roll up from the longer side and refrigerate for at least three hours wrapped in cling film.
  5. Unpack the rolls and cut into approx. 5 cm long pieces. To serve, place 2 rolls on a plate, dust with cocoa and garnish with the remaining chocolate.
